Ingredients for Irish Champ

4 Servings

4 large Baking potatoes

2/3 cup/158 ml Milk/non dairy milk

1/2 cup/4 oz green onions, chopped

1/4 cup/2 oz Butter or vegetable margarine

1/2 tsp. Salt

1/4 tsp. Pepper

Directions

Peel potatoes. Cut each into 3 chunks.

In 12 cup96 oz casserole, sprinkle potatoes with 2 tbsp water, cover, and microwave on high for 15-18minutes or until tender, rearranging occasionally.

Mash well. Stir in milk, onions and butter.

Microwave, uncovered on high for 1 minutes or until heated through.

Add salt and pepper, beat until smooth.

Makes 4 to 6 servings.
